Blueberry Glaze

Glaze/Drizzle

Measure out the following:

  • 2.25 lb powdered glaze/sugar
  • 8 oz blueberry bits
  • 4 tsp blueberry emulsion
  • 3/4 cups of water
  • 1/4 teaspoon of lemon juice

 

  1. In a large mixing bowl, combine the glaze powder and blueberry bits.
  2. Add hot water to the mixture and stir continuously until a smooth consistency is achieved.
  3. Add 1 tsp of blueberry emulsion to the mixture and stir well.
  4. Continue stirring until all ingredients are thoroughly combined and the glaze is smooth and glossy.
  5. If the glaze is too thick, gradually add more hot water until it reaches the desired consistency.

 

Produces about half a metal tin of glaze. Glaze will need to be warm in order to have the consistency to coat donuts.
