Yuzu Glaze

Measure out the following:
- 1 cup glaze (can be powdered glaze in which case make the glaze first)
- 1 cup yuzu marmalade
- 5 tablespoons yuzu juice
- Yellow food coloring (amount varies based on food coloring brand)
- 1 table spoon poppyseeds
- Soak poppyseeds in a cup of cold water for 10 minutes.
- Strain poppyseeds from water with mesh sieve. Set aside.
- In a bowl, combine glaze and yuzu marmalade. Stir with spoon.
- Add the yuzu juice gradually. Stir thoroughly.
- Add yellow food coloring until mixture is a bright yellow consistency.
- Add the poppyseeds. Stir until mixture is even.
- Transfer to metal tin.
- Store in fridge until ready for use.
This glaze will need to be warm to coat the donuts.
